ROASTED CAULIFLOWER
Harvest Time: Late Summer and Fall
Yield: 4 servings
Ingredients:
1 head cauliflower, cut into florets
Salt and pepper to taste
Olive oil
Parmesan cheese (optional)
Preheat oven to 400 degrees F. Cut cauliflower into bite-sized florets. In a medium bowl, toss cauliflower with olive oil. Place cauliflower in a single layer in a shallow baking dish. Sprinkle with salt and pepper. Roast in oven for 25-30 minutes, or until the tops start to brown. Sprinkle with Parmesan cheese if desired.
